Product Description
Product Description
Chilith Baegle Dal (also called halved Bogla Dal or halved Kashmiri fava beans) is a traditional Kashmiri pulse made from dried broad beans that are roughly split into halves. This processing reduces cooking time and enhances digestibility while preserving the hearty flavor of whole fava beans. It's a favorite in Kashmiri households, especially during colder months.
Harvested and sun‑dried in the Himalayan valley, this dal delivers an authentic experience of Kashmiri culinary heritage.
Nutritional & Flavor Profile
-
Nutrition (per typical serving): approximately 120 kcal, with around 8 g protein, 8 g fiber, 20 g carbohydrates, less than 1 g fat, as well as minerals like iron (~2.4 mg), calcium (~60 mg), and potassium (~400 mg).
-
Taste & Texture: Earthy, mildly nutty flavor with a creamy, slightly thick consistency when cooked. The halved beans soften quickly yet maintain a pleasant texture—less skininess than whole beans.
Cooking Suggestions & Traditional Use
-
Preparation: Rinse thoroughly, soak for 6–8 hours (optional but highly recommended). Cook using mustard oil and onions in a pressure cooker for about 10–12 whistles, then add a fresh tempering of hot oil and spices. Season to taste.Traditional Dish: Commonly used in winter stews and dals like Baegle Dal—served with rice, ghee, and sometimes seasonal vegetables like turnips (gogji).
-
Versatility: Also works well in fusion recipes—soups, stews, or Mediterranean-style dishes using halved beans as they break down smoothly without long soaking.
